Red Wine. IGP Cádiz. (70% Merlot, 15% Petit Verdot, 15% Syrah).
The grapes come from a 12-hectare plantation, vines planted at Hacienda Vistahermosa, in the Corchuelo area. Each variety was grown differently and practicing minimally interventionist viticulture, without using herbicides.
The harvest was carried out manually in boxes of no more than 14 kilos and at night.
After passing through a selection table and a previous cooling of the grapes in a cold room, each variety was elaborated separately in stainless steel tanks. After the vatting by gravity, in which some bunches are left whole, the malolactic process began in the tank and ended in the barrel.
Aged for 11 to 14 months in French and American oak barrels for an average use of 6 years.
Garnet color of medium-high layer. Intense and sincere nose, with notes of undergrowth, ripe red fruit, spices, cherries, coffee and cocoa.
In the mouth we find that its sweet tannin makes it a silky but powerful wine, with a toasted aftertaste and notes of coffee.
Normally Merlot does not respond well at all to hot climates, however here we find the exception, the high humidity has led to the perfect adaptation of this variety to the area of Cádiz. An example is this “Garum”, produced by Bodegas Luís Peréz, a silky and broad blend with a long aftertaste, dominated by Merlot, with a touch of Syrah and Petit Verdot. An original red in the land of sherry wines.
Bodegas Luis Pérez, returning the vineyard to its absolute prominence is the premise with which in 2002 the winemaker Luis Pérez, together with his children, founded his own winery, one of the architects of the recovery of quality red wines from Cadiz.
The interpretation of the terroir is the key for Bodegas Luis Pérez. Its more than 100 hectares of vineyards, spread over the famous Balbaína, Macharnudo, Carrascal and Corchuelo estates, are distinguished by their complete subdivision and absolutely personalized winemaking. Each plot is made in a different way, seeking the faithful expression of the terroir and the varietal to produce wines that seek to recover the old wine tradition of Cádiz.
